Yesterday at a MOMS Club meeting, a friend who is moving on Sunday was talking about how they are living out of boxes and off of pizza. I had a huge container full of chili left over from earlier in the week so I offered to bring it over for their dinner. I know, I'm so sweet right? Well here's how the conversation in my head went when it got to be dinner time:
"I think I'll put the chili in the crockpot to warm it up since their pans are probably already packed."
"Wow, I'm such a thoughtful person, etc, etc (other self righteous mumblings...)"
*Takes the container of chili from the fridge, opens it and looks inside*
"WTF!"
"Where did all the chili go! There's only half a container left! Nobody else in this house loved it, so where did it go?!?!"
"Ok, breathe. Think Andrea, think! Is this enough? Michaela wouldn't eat much, but they have three boys and I hear rumors that boys eat their weight in food, so this is definitely not enough!"
"Ok, lets take a look in the pantry and see if there's any more beans to bulk this up!"
"Nope. Oh look, a can of Hormel chili! Perfect!"
*Dumps it in*
"Hmmm. That doesn't look right. I'll mix it in really well and hopefully they'll never notice."
"Well, that's better, but I'm still not sure it's enough. I'll make some cornbread too."
*Rifles through pantry for a bit*
"Seriously, no cornmeal?!? Ok, corn tortillas? No. Cornstarch? No. Cornbread dressing? N...wait, I remember reading something online around Thanksgiving time about stuffing muffins, I can make those!"
"Shoot, I don't have time to search for that recipe online, who knows how much longer Rafael will be content in that swing?! Ok, how hard can it be?"
*Makes stuffing on stovetop. Puts finished stuffing in muffin pan. Bakes for 15 minutes.*
"Well, it's stuffing in the shape of a muffin, so I guess that works. Allright, I've got half a pot of chili and 7 stuffing 'muffins'. Is it enough? Aw, screw it, I'll take them a pizza from my freezer too and hope they learned their lesson about accepting food from neurotic mom friends!!!!"
If you're reading this, I'm really really sorry for the crappy dinner! Be safe while you're moving! We all love you and are going to miss you so much!
